Hello guys, welcome back to Vetoffee recipes, i hope you guys have been tried to recreated all the recipes i have posted on the blog. Just in case you did it, please i would love to know it. 

Also today, i just want to show you how to make a Cinnamon Cupcake in witch case this one is 100% vegan recipe, so this is a Vegan Cinnamon Cupcake. 

I recreated this delicious recipe because i have checked that most of the follower that i have on the Vetoffee account are taking a vegan lifestyle pretty serious, and also many of you are not vegan, but enjoy a healthy lifestyle, so this is my opportunity to make everybody happy. 

I would like to keep your mind open to the world of vegan desserts, because most of them are so simply and easy to make, i just love it, and benefits are more than you can think. 

This Vegan Cinnamon Cupcake only required few ingredients, i would show you how i exactly made them but also i will give you some variations that also apply to this recipe in case you do not find the main ingredients.

YOU WILL NEED... 

2 CUPS OF OLD FASHION OATS   

1 CUP FLAT SEED (OPTIONAL) 

1 CUP OF STEVIE ( BROWN SUGAR/ COCONUT SUGAR/ MAPLE SYROP/ REGULAR SUGAR) 

1 1/2 CUP OF VEGAN BUTTER (COCONUT BUTTER/ COCONUT OIL/ OLIVE OIL) 

2 CUP OF SOY MILK ( NON DAIRY MILK/ ALMOND MILK/ OAT MILK/ COCONUT MILK) 

1 TABLESPOON OF APPLE CIDER 

1 TABLESPOON OF BAKE SODA   

1 TABLESPOON OF VANILLA EXTRACT 


HOW TO MAKE IT.... 


The based of the vegan cinnamon cupcake is a non refined flour, non lactose and eggless, so no animal ingredients. As you can see, i did not mention an all purpose flour for this recipe, even thought we will make the flour using oat. 

The first you need to do, blend the oat until you get a similar texture to the regular flour, then, combined with the rest of the dry ingredients, and reserve it. 

In a bowl, mix the butter and sugar until you get a volume cream. In other jar combined the milk, vanilla, and apple cider and reserve it for few more minutes. 

After a while, combine the butter cream and little by little add the oat flour and bake soda, if the texture gets super dry, add a little of the milk you reserve before, and continue mixing, at the end, add cinnamon which is the main ingredient, add as much as you would like. 

The last step is, put on the cupcakes bowl and oven for about 20 minutes. 


NOTE: 

In case you did not find vegan butter, you can also use coconut oil, but the mix it is going to be different, place the sugar and milk on a bowl and do not over mix, then add the oat flour, at last add the oil, and cinnamon.

I really love this recipe, maybe my vegan cinnamon cupcake do not look as good as they tasted, but i wanted they to be like little bread, but you can also serve more of the mixture on each cupcake pan and the are going to look more pretty and bigger. 

This vetoffee recipe tasted so good, perfect balance and also ideal to breakfast or desserts. by the way try them with and fruit jelly, you would love how the taste.
