In America, October it's the month of the Halloween, and in some other countries, you guys celebrated the Death day, so no matter where you from, we all want to keep doing the best that we can, but also don't want to miss any celebrations.
As you know, few weeks ago i made a Pumpkin Cake because it's pumpkin time, for Halloween i didn't want to make the same, so i decided to go for carrots,and i did a carrot cake, this is a different version from the regular and i will also mention some few ingredients that are optional, and if you skip them, the Carrot Cake can be a vegan cake..
The benefits of the carrots are multiples, but one of them which i love are improve liver function, digestion, and it's also anti-cancer, so for me it is not anymore about eat a simple bunch of sugar, it is about care about what i eat and also be happy.
This healthy Carrot cake i just love it, the texture kind of a bread, the sweet like a regular cake, and as healthy as just one carrot, you will love it to. So be ready and let's bake.

BAKE PAN 20X13X6 (8 PERSON)
1/2 CARROT
2 CUP OF OAT FLOUR
1/2 CUP BAKE FLOUR
1/4 CARROT PURE
1/2 CUP OF ORANGE JUICE
2 CUP OF VEGAN BUTTER ( COCONUT OIL/ OLIVE OIL)
1 CUP OF BROWN STEVIE (COCONUT SUGAR/ BROWN SUGAR)
1 TABLESPOON OF CINNAMON POWDER
1 TABLESPOON OF BAKING POWDER
1 TABLESPON OF BAKING SODA
2 EGGS (OPTIONAL)
VANILLA EXTRACT
CARROT CAKE PREPARATION
1. Preheat your oven 350 F or 280 C.
2. Mix the vegan butter ( or oil) with the brown sugar until you get a volume and creamy mixture. Add the half of the oats flour and beat hand constantly, and then add the other half, the mixture has to look heavy and difficult to handle it.
3. On the same bowl, add the bake flour, and mix softly, at this point you can add the carrot pure, mixture is going to get and orange color, will be easy now to beat. So you can also add baking powder, baking soda, and cinnamon.
4. Now, add the orange juice, little by little, and beat low speed.
5. You can also add the carrot and mix slowly.
6. This last step is optional, you can add the eggs, one by one, and use the electric hand mixer to beat, but if you are vegan you can skip this step, it won't happen nothing on the result of the carrot cake, it is just about the volume.
7. Stir the mixture on the pan and leave it on the oven for 50 minutes, it takes long time to bake that a regular cake because this mixture is really light and soft, but be patient, will worth it.
After the time on the oven, you need to let cold the cake for at least 30 min, or overnight (as i did), the Healthy carrot cake can be eating like a bread, and keep it simple, slide the cake and serve with almond milk, hot cocoa, or any drink you like.

| Halloween Vetoffee Style |
If you are more created (like me) i use this healthy carrot cake for Halloween and i decorate it horribly and simply easy and healthy. So i made a cream cheese made by, cream cheese and honey( i did not add any confection sugar) , and for top, ganache chocolate, i melted dark chocolate and 1/3 heavy cream (i did not add any sugar).

Remember on bakery everything is about passion, but in healthy bakery everything is about each ingredient, do not over use fat, sugar, flavor, flour, colors, preserver, gluten, lactose. For me, this carrot cake it is much more healthier than the regular, is super tasty, rich on benefits, low in carb, sugar, gluten.

This Vetoffee carrot cake can also vegan if you skip the eggs, and if you also use syrup, maple, stevie. And believe is it still delicious.
