Welcome guys again to my Vetoffee blog, if this is your first time checking the web be more than welcome. As you guys know, this month is fall time, and also Halloween time, so everyone also knows that it's pumpkin time. 

Considering the fact that many people are obsessed about the pumpkin, and I have to say I am one of that "many people" couldn't resist myself on make this awesome  and easy recipe, of course, there are many variation and ways to make it but as always I'll share the vetoffee way and this pumpkin cake is perfect for those that believe on a low carb diet, vegan diet, and low or non-sugar diet, so vetoffee version is the healthiest option for you not to eat the fall season incorrectly. 

Pumpkin cake has some punctual benefit I need to mention, is gluten free, low sugar because pumpkin is naturally sweet. This cake is eggless but if you are not vegan you can also add 1-2 eggs. 

WHAT DO YOU NEED TO MAKE PUMPKIN CAKE?


1 CUP OF ALL PURPOSE FLOUR

1/2 CUP OF OAT FLOUR

1/2 CUP OF COCONUT FLOUR 

1 BUNCH OF ALMONDS 

1 1/2 CUP OF ALMOND MILK ( CAN USE SOY OR COCONUT MILK) 

1/2 CUP OF COCONUT OIL (CAN USE VEGAN BUTTER OR OLIVE OIL) 

1/2 CUP OF BROWN STEVIE SUGAR (CAN USE BROWN/ MAPLE/ REGULAR) 

2 CUP OF PURE PUMPKIN 

1 TABLESPOON OF CINNAMON AND NUT 

1 TABLESPOON OF APPLE VINAGER (OPTIONAL) 

VANILLA EXTRACT

SALT 

PREPARATION 

1. COMBINE THE DRY INGREDIENT ON THE FOOD PROCESSER AND RESERVE IT. 

2. COMBINE THE LIQUID ON A BOWL AND  ADD THE PUMPKIN PURE AND MIX. THEN, ADD THE DRY INGREDIENTS LITTLE BY LITTLE AND KEEP MIXING. 

3. FEW MINUTE AFTER THE MIX IS GOING TO BE READY. IT HAS TO LOOK PRETTY HEAVY. 

4. THE TRICK IS ON THE MIXING, DO NOT OVER MIX. YOU CAN USE A REGULA SPOON TO MIX AL THE INGREDIENTS. 

5. LEAVE THE MIXTURE ON A PAN AND BAKE IT ON A PREHEAT OVEN 350 F FOR ABOUT 40 MINUTE. 


VARIATION NOTES

Remember, our main idea is recreated all the recipe that you love but on the healthiest version, even though you can change some ingredients depending on the circumstance that you are or prefer to cook and eat, for example, i use soy milk, but you can use almond, coconut, or just regular milk. 

If you do not find or can not buy coconut oil, olive oil or vegan butter, you can always use regular butter and if you want to use oil, choose the best option, do not use the regular oil. 

Some ingredient in my pumpkin cake like almond and apple cider are optional, I use them because of love the taste, but you can also use regular ingredients like oats, chocolate chip, and why not use some pumpkin cube.
