Happy Week for all my readers. I'm just too happy to share a new recipe this week. The dessert I reveal today is as sweet and healthy as the body may need. As always, this dessert is an excellent source of good sugars, does not contain lactose, or lean fats that have negative effects on our body.

Today's recipe is a little cupcakes, cupcakes or honey cupcakes, known by other nationalities as Ponque Dorado, I was reading this recipe in a Dominican magazine, and it's looks excellent but very high in sugar, For this reason I decided to replicate it in a healthy version.

I also want to tell you that the ingredients of these honey cupcakes are super simple and you can find them easily anywhere you are. With nothing more to add, take note of what you need.


INGREDIENTS FOR HONEY PONQUESITES (item 6)


4 Whole eggs

1 cup stevie sugar (you can use brunette or coconut)

1 lemon (green, yellow, or orange)

2 cups of oatmeal (you can use almond or coconut flour)

1/2 cup all-purpose flour (optional, you can substitute oatmeal, coconut, or almond)

1/2 cup of neutral oil (olive or coconut)

1/4 honey (5 tablespoons honey / mapple / syrup)

Vanilla extract


MIX PREPARATION


1. You must beat the egg with the cup of sugar, I use Stevie (truvia) because it is the healthiest, you can use any other brand, even brown or coconut, but I recommend Stevie if you have problems with sugar or insulin . The mixture must be foamy.

2. To the previous mixture you must add, the oil and the honey, to beat for 3 minutes, and to add the flour of oats (or the flour of your selection can be almond or coconut). Do not beat the mixture to an extreme or it will affect the final recovery.

3. Continue adding all purpose flour, and baking powder, baking soda, cinnamon and walnut. Beat for 3 minutes at the minimum of the electric mixer or use a paddle and mix in a wraparound form.

4. Finally add the zest of lemon or orange, also the teaspoon of the vanilla extract.

5. The mixture should be distributed in pancake mold, and you should take the oven to 300 F for 20 to 25 minutes (in the video I said an hour by mistake :() or 35-40 min at 160 C.


These honey cupcakes are super healthy, and you can make them in just a few minutes, and keep them ready for any breakfast or snack, you can decorate them as you want to, fill them or even before baking you can add to the mix chocolate chips or dehydrated coconut, Raisins, pieces of some fruit.

Really honey cupcakes are versatile and you can accompany them with whatever you like. Easier impossible.
