Hello my dear followers. I am glad to greet you again. Today I was inspired by the Christmas spirit, and I was thinking of what cake to do for you that would remain healthy and high in benefits.

In Venezuela, when you think of Christmas, you think of raisin cake, and nuts, it's something beyond, and to get back to my roots, I want to present my healthy version of that delicious cake.

This cake has my brand Vetoffee and I have called Crunching Almonds, its fundamental base is the almond and dried fruit. Here is the recipe for this rich cake.


INGREDIENTS

DOUGH

1/2 cup of coconut sugar (you can use brunette, stevia sugar, or even white sugar)

1 cup sliced ​​almonds (you can add more nuts like walnuts, raisins, sunflower seeds)

2 cups almond flour (you can substitute for coconut flour, or oats)

2 cups oatmeal

1/2 cup all purpose flour

The juice of 1 lemon

1 cup 1/2 melting margarine (you can use acaite of coconut or olive)

1 cup honey (agave or syrup)

6 egg whites

Cinnamon

Baking powder

GLASE (OPTIONAL)

200g of sugar glass

filtered water

Orange or lemon zest


PREPARATION

DOUGH

1. Place the sugar, almonds (remaining nuts of your choice), flour, baking powder, and cinnamon in a bowl, and mix well.

2. Whisk the egg whites with the aid of an electric mixer until obtaining a frothy shake.

3. Place the margarine (vegan margarine, coconut oil or olive oil) and honey in the frothy egg mixture.

4. Incorporate the mixture of flours and nuts to the previous mixture.

5. Finally, place the mixture in a previously floured and greased mold and carry in the oven for 40 min at 250 f or 180 c. Remove from the mold with care and let stand.


GLASE (OPTIONAL DECORATION)

6. Place the zucar flower in a bowl, add the water little by little, without stopping to beat, Add the amount of water necessary until you get salsa.

7. Perfume the mixture with lemon zest, and beat until blended. Pour the mixture into the previously cooled cake, put almonds filleted to decorate.

This vetoffee recipe of crispy almonds is an astel that reminds me of my childhood, over time this almond crocantesse cake has perfected, and now I can share it with you.
