Every week, Vetoffee is posting a new recipes for you guys, taking the best part of the dessert's world and try the healthy version. So, this time, we are going to make THE COCONUT BROWNIE, i am so glad to try this delicious recipe that i just check online last week, by the way it was really a challenge to try the healthy version of this. 


Even thougth, was a challenge, it wasn't impossible at all. So if you love coconut and also brownie, keep reading,i'll show you how i do it,in the Vetoffee style. 

Coconut Brownies - Fudgy brownies topped with a layer of creamy sweet coconut, and finished with a smooth chocolate ganache, it is so good and tasty, melted in your mouth on each bite.

COCONUT BROWNIE VETOFFEE
COCONUT BROWNIE INGREDIENTS

9X9 pan of brownie 

8 oz (226 gr) original cream cheese

3 cups of sweetened coconut flakes

8 oz (226 mil) heavy cream

4.25 oz (120 gr) dark chocolate

2 spoons cocoa 



PREPARATION OF COCONUT BROWNIE

The coconut brownie is simple to make, but the basic you need is the brownie, so to keep this recipe as healthy as i would like and i guess you want, go to Easiest brownie recipe and check how to make a healthy version of a brownie, also it's my favorite brownie ever because it's low of sugar, gluten free, vegan option, lactose free, many benefits than you do not want to skip. 

After your Easiest Brownie is done, you need to make the coconut base, so take the cream cheese and mix until gets volume,proceed to add 4 oz ( a half) of the heavy cream, mix together, at that point you can add a bit of vanilla or coconut extract, last step, add 3 cup of coconut and mix in low speed or by hand, it has to look like a heavy mix of coconut.  

Spread the mixture over the Easiest Brownie you make, take it to the refrigerated until you fnis the next part. 

Now let's make the  smooth chocolate ganache, so, melt the chocolate on the microwave for 1 min or 2 min, or pull on the kitchen low speed, take off the chocolate and add the other half of the heavy cream,combined softly and if you prefer (this is optional) add the spoons of cocoa, it is going to get darker, so also not that sweet, so you also can add Stevie or brown sugar ( 1 spoon), if not, just keep it how it was, it has to be smooth. 

Place the smooth chocolate over the coconut layer, let the result rest refrigerated for 2 hour or overnight, it has to set it down so then you can cut it in several servings. 

I have to say, this recipe was hard to created in a healthy form, but i am really happy with the result, THE COCONUT BROWNIE now it's my husbands favorite, and the best part, is tasty, and healthy, not just because i say it, because, in the entire Vetoffee recipe, i only use few ingredients, making sure to use the low fat versions, and non sugar added. 

This COCONUT BROWNIE is perfect snack to make when you want to surprise your family or friends, the look naturally delicious, and the presentation is pretty much like something you buy on a bakery, also you can use then to decorate a dessert table. 

The flavor of the coconut and the brownie together is just like a perfect marriage, even while i didn't add any sugar at all on my recipe the flavor and balance was just right, the chocolate gets just in point, So perfect that i think you can even feel a little guilty because taste so good that make your mind thinks it is not healthy.
